Local quality standards are the strictest. All stages of coffee cultivation and processing are regulated at the state level. Only ripe cherries are harvested, exclusively by hand. Only organic fertilizers are used, and almost all coffee undergoes wet processing. Product quality is checked at every stage, even immediately before loading at ports. The main distinguishing feature of Colombian coffee is that it is grown among taller trees that provide shade. This gives mature coffee a softer flavor with a subtle wine-fruity undertone. It’s for this quality that it’s prized worldwide.
