Local quality standards are the strictest. All stages of coffee cultivation and processing are regulated at the state level. Only ripe cherries are harvested, exclusively by hand. Only organic fertilizers are used, and almost all coffee undergoes wet processing. Product quality is checked at every stage, even immediately before loading at ports. The main distinguishing feature of Colombian coffee is that it is grown among taller trees that provide shade. This gives mature coffee a softer flavor with a subtle wine-fruity undertone. It’s for this quality that it’s prized worldwide.

Ethiopia is the country of origin of coffee and the only country in the world where plants are found in the wild. At an altitude of around 1800 metres, Arabica coffee grows wild here, in the shade of tall trees. For thousands of years, each family has picked the cherries, dried them in the sun on suspended beds, roasted them, pounded them in the mortar and offered the coffee to guests following an atavistic ceremony, a solemn rite with a strong symbolism of respect and hospitality.
